  1. Finely chop carrot, beetroot, ginger and slit green chilli.
  2. Take boiled potato and mash it.
  3. In moderately heated pan add oil, add chopped ginger and 1 green chilli, sauté for few seconds then add carrot + beetroot + green chilli and sauté for 3-4 minutes.
  4. Now add chopped capsicum and sauté for 6-7 minutes by adding slight turmeric + salt + red chilli powder + garam masala. Let it cool and discard green chilli.
  5. Now add the above cooked veggies to mashed potato and mix, add semolina and mix well. Start taking medium portions from mixture and give shape of cutlets. Coat with bread crumbs.
  6. In moderately heated pan add oil, drop cutlets and shallow fry on both sides till golden brown under low to medium flame.
  7. Cutlets are nicely fried and it is done.
  8. Sprinkle rock salt and serve with onion rings and green chilli.
